Day 85

Day 85- A Devilish Cupcake

I made some really tasty chocolate cupcakes today!!  Recipe is included if you click the link below!

Chocolate Cupcake Recipe
Makes 24-30 cupcakes
Prep Time- 15 minutes
Baking Time- 20-25 minutes


Ingredients
-1 cup (2 sticks) unsalted butter, softened
-3/4 cup unsweetened cocoa
-2 cups all purpose flour
-1 teaspoon baking soda
-1 teaspoon baking powder
-1 teaspoon salt
-1 1/2 cups sugar
-1 tablespoon vanilla extract
-3 eggs, at room temperature
-1 1/2 cups whole milk
-nonstick spray or cupcake liners


Directions
1. Heat oven the 350 F.  Spray cupcake tins or fill with cupcake liners.
2. In a mixing bowl, combine cocoa powder, flour, salt, baking soda, and baking powder.  Whisk ingredients.
3. With an electric mixer beat butter and sugar on a medium speed for about 2 minutes.  Beat in vanilla, then eggs, one at a time.  Be sure to scrape the sides of the bowl.
4.  Add flour mixture in three separate additions and milk in two separate additions. Alternate between flour mixture and milk, beginning and ending with flour.  Mix on low speed or with wooden spoon.
5.  Spoon batter into cupcake tins, filling then 2/3s full.
6.  Bake for 20-25 minutes or until toothpick inserted into the center comes out clean.
7.  Cool in pans for 10 minutes, then transfer to cooling rack.  Cool completely before frosting.

Chocolate Frosting 
Double the recipe if doing heavy frosting on the cupcakes!


Ingredients
-6 tablespoons butter, softened
-1 tablespoon vanilla extract
-3 cups powdered sugar
-3/4 cups cocoa powder
-1/3 cup whole milk


Directions
1. With an electric mixer, on low speed, cream the butter and sugar.
2.  Add powdered sugar and cocoa to creamed mixture until fully combined.
3.  Slowly add milk to the mixture until you have reached the desired consistency.  You may not need to use all of the milk.  
4.  Beat with an electric mixer for about one minute.
5.  Optional- Top cupcakes with chocolate chips!
6.  Enjoy!!
